Sunday morning freshness!

I don't know about you but I like to make something a little more special that normal on a Sunday. Sometimes, we are doing something on Saturday and don't have time to sit down and eat but on Sunday sometimes we want to be lazy and relax. This is when I "pull out all the stops"

Easy Garden Egg Bake

6-8 eggs, beaten
1/2 cup milk (or cream if you want it richer)
salt and pepper to taste
4 slices of bread, crusts removed and cubed (white, wheat or rye, your choice)
2 green onion, sliced
1/4 of green pepper, chopped
1 Roma tomato, chopped
1 cup leftover meat of choice (we had a some grilled pork left from dinner and some strips of bacon)
1 cup shredded cheese (I used Pepper Jack)

Preheat oven to 350 degrees.
Grease 9X13 glass baking pan. Mix eggs and milk, season with salt and pepper and set aside. In baking dish: put cubed bread, chopped veggies and leftover meat. Take fingers and gently mix the ingredients. Pour on egg mixture and bake for 30 minutes.


Cover with grated cheese and let melt on top while you get plates ready, etc. I prefer to put my cheese sometimes on top AFTER. I don't want it getting over cooked. Sometimes I mix it in the bake...just depends on my mood.

When cheese is melted cut into squares. This bake was on the thin side so I cut them into large squares.

Add some fresh fruit on the side and ENJOY!

I'm with you: Sunday is definitely a day to sit down and eat some good, hearty breakfast fare, and this egg bake looks like a perfect way to achieve that hearty breakfast. YUM! Sorry that I’ve been an absent commenter; I just finished up my law school exams and am finally getting around to my google reader. Anyway, the breakfast looks great!

MMM, Sunday breaakfasts are a wonderful thing, as is this dish! Now all Id need is a Bloody Mary to complete the delicious deal!
