Paleo Chocolate Cupcakes!!!

 I've made a few treats from some Paleo recipes.  Two different brownie recipes and although they were OK....they were too dense, not fudgy and way too greasy.  I never bothered to post them.  Last night, when I was craving some chocolate I found a cake recipe wonder if these too would be too dense and greasy as well....SCORE.  They were NOT!
I've made enough Paleo stuff now that I realize that I can go lighter on the oils to change the grease factor.  Knowing that egg proteins expand in the heat...perhaps an extra egg would give it some umph!!! So, in JennyMac fashion, I found some a cake and frosting recipe, tweaked them baked trumphantly!

Paleo Chocolate Cupcakes

1 cup almond flour
1 cup cocoa powder
1 tsp. baking soda
1/4 tsp. sea salt
1/2 cup coconut oil, melted (this would be fine with grapeseed as well I am sure)
5 eggs
1 tsp. vanilla
1/2 cup honey

Preheat oven to 350 degrees.  Line muffin tin with 12 papers.  Combine dry ingredients in medium bowl and set aside.  Whisk eggs, oil, vanilla and honey then pour into dry ingredients.  Use a electric hand mixer to combine, breaking up lumps and will help emulsify the eggs.  Use a ice cream scooper to put into muffin cups.  Cook for about 25 minutes or until toothpick comes out clean.  Cool on cooking rack.  Makes 12.  See frosting recipe below.

Vegan Chocolate Frosting

1/2 cup dairy-free dark chocolate chips
1/4 cup grapeseed oil
1 Tbsp. honey
1 Tbsp. vanilla
pinch sea salt

Melt the chips with the oil in the microwave for 1 minute.  Stir until smooth.  Stir in honey, vanilla and salt.  Frosting will be very loose.  Dip each cupcake top into the glaze.  I noticed as I was dipping the frosting was getting thicker as I could double-dip some of the cupcakes again makes a thicker fudgy top.

These were light, fluffy and decadently scrumptious!

Chocolate Peanut Butter Layered Cupcakes

I am always in the mood for Chocolate and Peanut Butter Combinations! I found these on Pillsbury's site!

Chocolate Peanut Butter Layered Cupcakes

1 1/2 cups all purpose flour
1/3 cup baking cocoa (I used Hershey's Dark)
1 cup packed brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup oil
1 cup water
1 tablespoon white vinegar
1/2 teaspoon vanilla
1 egg
1 package (8 oz) cream cheese, softened
3/4 cup peanut butter
1/3 cup granulated sugar
1/3 cup powdered sugar
1/4 cup peanut butter chips
1/4 cup semi-sweet chocolate baking chips


1. Heat oven to 350°F. Place paper baking cup in each of 18 regular-size muffin cups.
2. In large bowl, mix flour, cocoa, brown sugar, baking soda and salt. Add oil, water, vinegar and vanilla to flour mixture, stirring just until smooth (do not overmix).
3. In another large bowl, beat egg, cream cheese, peanut butter and granulated sugar with electric mixer on medium speed until smooth. Add powdered sugar; beat until creamy.
4. Spoon 1 level tablespoon chocolate batter into each cup; evenly spread 1 level tablespoon peanut butter filling on top. Repeat layers. Sprinkle with peanut butter chips and chocolate chips.
5. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean (do not overbake). Cool in pan 15 minutes. Remove from pan to cooling rack; cool 15 minutes. Serve warm or cool.

Recipe says makes 18.

We shared with two neighbors. One was moving and this was my goodie for them in case they got hungry during the move. The remaining ones I left for K-man and I were gone in 3 days!

Easy and so yummy!

OMG! I have to HAVE this recipe!

Ever said that when you ate something from a restaurant? Yeah well, good luck getting the recipe from the chef. Most of us have to resort to sneaking around for a copycat somewhere on the internet.

We ooh'ed and ahh'ed over a Lemoncello Dessert from the Cheesecake Factory. I've been trying many different recipes to try and replicate it....it's not hitting the mark but it's fun trying.


Limoncello Cupcakes


Yield: 1 dozen or 6 Texas Sized

For the cupcakes:
1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 ounces (½ stick) unsalted butter, at room temperature
2 ounces cream cheese, at room temperature
1 cup granulated sugar
3 large eggs
2 tablespoons limoncello
½ cup buttermilk
¼ cup lemon juice
Zest of one lemon

Make your own homemade:
For the lemon curd:
Zest of 2 lemons
½ cup lemon juice
¼ cup granulated sugar
1 egg + 1 egg yolk

For the cream cheese limoncello frosting:

2 ounces (½ stick) unsalted butter, at room temperature
4 ounces cream cheese, at room temperature
1 tablespoon limoncello
zest of one lemon
2 cups powdered sugar, sifted

1. Prepare the cupcakes. Preheat the oven to 350 degrees F and position a rack in the center. In a medium bowl, combine the flour, baking powder and salt; set aside. In the bowl of an electric mixer fitted with a paddle attachment, beat the butter, cream cheese and sugar on medium speed until light and creamy, 2-3 minutes. Add the eggs, one at a time, beating well after each addition. Add the limoncello and beat an additional minute. On low speed, add flour mixture and buttermilk alternatively, beginning and ending with the flour mixture. Add the lemon juice and zest and mix on low speed just until incorporated. Divide the batter between 12 muffin tins (I used one Texas Size Muffin tin). Bake for 20 minutes or until a toothpick inserted near the middle comes out clean. Let cool completely.


2. Prepare the lemon curd. In a heavy medium saucepan, stir together the lemon zest, juice and sugar and bring to a simmer over medium heat. In a small bowl, whisk together the egg and egg yolk. Whisk the lemon mixture into the eggs to temper them. Scrape the mixture back into the saucepan and place over medium heat, whisking constantly until it thickens, about 5 minutes. Remove from the heat, and let cool completely.

3. Prepare the cream cheese limoncello frosting. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and cream cheese on medium speed until light and creamy, about 2-3 minutes. Add the limoncello and beat for an additional minute. Reduce the speed to low and gradually add the sifted powdered sugar and beat until fully incorporated and smooth.

4. Assemble the cupcakes. Cut a hole into each cupcake with the large end of a melon baller or the back end of a large pastry tip. Fill each cavity with the lemon curd. Fill a pastry bag with a star tip (I used Wilton 1M) with the cream cheese limoncello frosting and pipe onto each cupcake. Decorate with lemon and berries, if desired.




Cook's Notes:

  • I feel I am getting close. This cake was too dense for me. My first recipe used a Japanese Soft Lemon Cheesecake recipe and it was still soft and spongy despite being refrigerated. This cake became too firm.
  • The jarred Lemon curd was okay but I've made homemade lemon curd for pies before and it's definitely better and more tart....jarred stuff is not tart enough and overly sweet.
  • This frosting was lovely, spot on.
  • So the next time you see my post on this again, I will have used the Japanese Soft Lemon Cheesecake recipe in a springform pan split into two layers. Homemade lemon curd as filling, and this frosting lightened up with whipped cream. Oh, and some strawberries of course. I am definitely in the process of cracking this case...perhaps I need to go to the Cheesecake Factory and try it just onnnnnneeeeeeeee moreeeeeeeeee time! You know, for research!

Playing with my food...

Wheeeeeeee! I got my prize!

I entered Mommy I'm Hungry's blog giveaway and this is what I won....

More importantly....I got a handwritten letter from Nora too....writing notes is a lost art. How sweet of her!!!

Soooooo, I am looking at my two cake mixes....thinking....hmmmmmmm. I will make a cake with the one....what should I do with the other for FUN? Should I make a cake? Cupcakes? Hmmmm, it's been awhile since I made a cake-mix cookie though....hmmmmm. How about BOTH!!!!!

So here is how I did it....


I weighed out the mix and put half in a bowl. The directions called for 1-1/4 cups of milk, 1/2 cup oil and 2 eggs.
I figured for a half batch of cupcakes (the box makes 24) I would use 1/2 cup plus 2T milk, 1/4 cup oil and 1 egg.






For fun....I had some extra cookies hanging around. Some oreos and some chocolate cookies. The mix seemed like it needed more 'friends'....lol. Got out the ol' rolling pin...*crunch-crunch* K-man yelled from the basement "Come-in!" hahahahahaha







Here's half of the mix and the 'extra friends' added.









I baked the cupcakes for the time recommended on the box....nicely rounded tops.....

...and the mix cut in half made *18 cookies. *Not all shown for they were being tested for 'quality control'

For the cookie cake mix recipe:

Half of cake mix
1/4 cup oil
1 egg
2 tsp. milk

Mix. Add milk by tsp until it comes together more like a cookie dough. Bake @ 375 for 10 minutes. Let set on cookie sheet for 2 minutes and transfer to cooling rack.













Cook's Notes: These were awesome! Often times I can detect this 'taste' that all cake mixes have. It's weird, no matter what flavor the cake mix....they all have this 'fake taste' thing going on....Not this mix. AND, it was so nice to read the ingredients and be able to not only recognize what they were but also to pronounce them all. LOL. Thank you so much Naturally Nora.....and I promise....to make my next box...unadulterated! The Chocolate frosting was incredible...I will never use the canned stuff every again!
